Echoes of the Trail
In the wake of our exploration of the Delmonico and its ties to the pioneering spirit of Joseph McCoy, we venture further into the legacy of the cattle drives that shaped America's culinary frontier. Fresh meat, a rare delight savored in moments of abundance or necessity on McCoy's drives, becomes a symbol of the exceptional quality and tradition that Texas Slim's Cuts embodies. Texas Slim, our modern-day McCoy, curates an experience that transcends time, offering a taste of the trail with every cut in the Top Hand Beef Box.
Joseph McCoy, an ambitious entrepreneur from Illinois, saw an opportunity in the post-Civil War era when Texas was overflowing with cattle that had no profitable market due to the closure of eastern trails by "Texas Fever". This disease, carried by ticks on longhorn cattle, was devastating to local livestock and led to quarantine lines that no longhorn could cross. McCoy's visionary solution was to create a route that bypassed the quarantine zones, leading the cattle to a railhead in Kansas, from where they could be shipped to hungry markets in the East.
McCoy chose Abilene, Kansas, a small community within the quarantine lines, for his stockyards. Despite initial resistance from local farmers and the challenge of the quarantine line, McCoy negotiated an agreement with Kansas Governor Samuel Crawford, allowing the transportation of Texas cattle to Abilene. He quickly started construction on the stockyards and sent agents to Texas to direct struggling herds towards Abilene. To aid the cattle drives, he had Timothy Hersey, a pioneer of Abilene, survey and mark the Chisholm Trail, which at the time was not yet known by that name.
The success of McCoy's endeavor was immediate and overwhelming. Before the construction of the pens was even complete, 7,000 longhorns arrived in Abilene. By the end of the season, the number reached 35,000, and in the following years, the numbers grew exponentially, reaching 600,000 by 1871. McCoy's agreement with the Union Pacific Railway, which initially included a payment of five dollars for each car of cattle shipped, was pivotal in this success, despite later disputes over payments.
McCoy's efforts did not go without challenges, especially as "Texas Fever" began to affect the perception of cattle from Abilene among eastern buyers. In a creative move to reassure his clients, McCoy organized a spectacle involving cowboys capturing and displaying wild plains animals, followed by a buffalo hunt for the buyers. This not only impressed his clients but also revitalized his business when they witnessed the quality of the longhorns waiting at his stockyards.
This period of prosperity transformed Abilene and established it as a key hub in the cattle trade, attracting a wide range of businesses and growing the local economy significantly. However, the success was short-lived as increasing issues with Texas Fever and lawlessness led to an ordinance in 1872 prohibiting Texas longhorns, effectively ending Abilene's role in the cattle drives.
The Luxury of Freshness
On McCoy's drives, the moments when fresh meat graced the cowboy's plates were few and far between, reserved for special occasions or when the herd's welfare dictated. This scarcity heightened the value of each savory bite, a luxury that Texas Slim's Cuts now brings to your table with ease. The Top Hand Beef Box is a celebration of those rare mometnts, making the exceptional an everyday experience.
